Our Tropical Forest varietal comes from the wild Waiawi blossom—also known as lemon guava—which blooms prolifically in the forests of northern Hilo. These guavas are not the large, cultivated ones found in stores; they’re smaller, wild, and packed with vibrant character. The resulting honey carries a robust, refreshing flavor profile—slightly sweeter than our other varieties, with a bright citrusy essence, especially notes of lemon. Because these blossoms thrive in untamed forest terrain, the bees have access to a wide variety of native flowers. This diversity makes each harvest subtly unique, with evolving layers of flavor that reflect the richness and spontaneity of the wild. It’s tropical, dynamic, and absolutely delicious.
